Hey everyone! We are definitely living in strange times this week with social distancing and the collective prevention of COVID-19. I feel for a lot of friends, family, and fellow vendors that are concerned for their health, businesses, and community. It’s crazy times, but it’s good that we’re in this together. I’m grateful to all of those who have checked in on me and my business.

I’m especially grateful that I’m at home with my wife, Anna, for the next couple weeks. We are staying put as much as possible. I love quality time, and bonus, Anna is an amazing cook!

Anna made lunch for us today, and then we photographed it! If you’re looking for an easy, affordable, and delicious meal give this a try!

Cooking is a great activity to do if you’re at home. Taking photos of your food is pretty fun too! Bonus that you get to eat and enjoy it.

Pasta with Sausage and Lemon Butter Sauce

Ingredients

1 pound mild Italian sausage
1/3 cup white wine
3 tablespoons lemon juice
1 box farfalle pasta
1 package green peas
1 yellow onion
2 cloves garlic
1 cup pasta cooking water reserved

Brown 1 package of mild Italian sausage in a pan until crispy, 8-10 minutes. Set aside in a bowl.

In the sausage drippings, cook down one diced yellow onion until soft and tender (5-7 minutes). Then add 2 diced garlic cloves.

Add 1/3 cup white wine and 3 tablespoons of lemon juice. Simmer for 3-5 minutes.

Add one stick of butter, 1 tablespoon at a time, stirring and allowing each piece of butter to fully melt and blend into the sauce before adding the next.

Boil pasta according to box, and cook the peas. I used a microwave steamed bag! Combine all your ingredients in your serving dish. I also reserved some of the pasta cooking water to add to the pasta to help thin out the sauce and make everything nice and glossy! I added a few tablespoons to help everything come together.

The result is a light buttery pasta that has a bit of tang from the lemon and a salty/savory kick from the sausage.

You may enjoy it with a glass of the same wine you cooked with! We had Sean Minor’s Sauvignon blanc on hand and used that, it’s delicious!
