Chicken Fajitas for the win!
Anna made these on Friday for lunch. As crazy as everything is right now, it’s wonderful to finally have the time and right light to photograph her delicious cooking. We had all the ingredients. It was the perfect lunch, and made delicious leftovers.
- 1 cup frozen corn
- I can black beans rinsed
- 2 cups cooked rice
- 1 red onion
- 2 bell peppers
- 2 table spoons salsa
- 1 tablespoon tomato paste
- Salt and cumin to taste
- Marinated chicken breasts
Sauté diced red onion and corn in a pan on medium high
Add the tomato paste, salt, and cumin.
After about 5 minutes add the rinsed black beans and cooked brown rice
Add about 2 tablespoons of salsa to the rice and beans
Broil the marinated chicken and bell peppers in the oven at 425 for 25 minutes
Serve with limes, avocado/guac, chips, and tortillas
Garnished with cilantro
